Cheesy Baked Mexican Dip

This cheesy baked mexican dip is one of those recipes that feels fancy but honestly couldn’t be easier to pull together. You brown some ground beef, layer it with beans and salsa, top it with cheese, and let the oven do the heavy lifting, no fussy techniques required.

The magic happens when everything gets warm and bubbly in the oven, turning into this incredible comfort-food dip that beats cold seven-layer dip by a mile. It’s the kind of dish that disappears fast at parties and tastes like you spent way more time on it than you actually did.

The Ingredient Lineup

This dip starts with seasoned ground beef and refried beans as the base, then layers in salsa, green chilies, and a generous handful of cheese. Top it all with fresh garnishes right before serving for maximum flavor and texture.

  • Ground beef: A pound of lean beef gives you a hearty, filling base. Brown it well so it gets a little color and flavor.
  • Cumin, paprika, garlic powder, and chili powder: These four spices create that warm, classic Mexican-style seasoning. Or grab a packet of taco seasoning if you want to keep it simple, either works beautifully.
  • Refried beans: They add creaminess and bind everything together. Canned is totally fine and saves you time.
  • Salsa and green chilies: These bring the brightness and heat. Use your favorite salsa heat level, and the green chilies add a subtle kick without overwhelming the dish.
  • Mexican cheese blend: This mix of cheeses melts beautifully and tastes better than a single cheese alone. Don’t skip the shredding, pre-shredded works great.

Let's Make Cheesy Baked Mexican Dip

Here’s how we build this crowd-pleaser layer by layer:

Step 1: Prep and Brown the Beef

Preheat your oven to 350°F and spray a 9-by-9-inch baking dish with nonstick spray. In a large skillet over medium-high heat, brown the ground beef, breaking it apart as it cooks, until it’s no longer pink, about 6 to 8 minutes. Drain off any excess fat if needed, then stir in your spices.

Step 2: Layer the Base

Add the refried beans to the cooked beef and mix everything together until combined. Spread this beef-and-bean mixture evenly across the bottom of your prepared baking dish, pressing it down gently.

Step 3: Add Salsa and Chilies

Pour your salsa over the beef layer, spreading it out evenly. Top that with the diced green chilies, scattering them across the surface. This is your flavor layer, so don’t be shy.

Step 4: First Bake

Slide the dish into the oven and bake for 30 minutes uncovered. This lets everything heat through and the flavors meld together beautifully.

Step 5: Add the Cheese

Pull the dish out and scatter the shredded Mexican cheese blend over the top in an even layer. Return it to the oven for just 8 to 10 minutes, until the cheese is melted and bubbly.

Step 6: Top and Serve

Remove from the oven and let it cool for just a minute or two. Top with diced tomato, sliced green onion, fresh cilantro, a dollop of sour cream, and sliced black olives. Serve warm with plenty of tortilla chips for dipping.

Serve It With

  • Serve with tortilla chips, of course, get plenty because this disappears fast.
  • Pair with cold beer, margaritas, or sparkling lime water for a casual gathering.
  • Scoop it onto small plates with a few chips on the side for a more sit-down appetizer.
  • Add a dollop on top of tacos, nachos, or even a simple green salad for a warm, cheesy topping.

Why This Recipe Works

  • Melty, ooey-gooey cheese throughout, so much better warm than cold
  • Only 10 minutes of prep, then the oven takes over
  • Feeds a crowd with just one baking dish
  • Totally customizable with your favorite toppings and salsa
  • Comes together with pantry-friendly ingredients you probably already have

Tips From My Kitchen

  • Don’t skip draining excess fat from the beef, it keeps the dip from getting greasy on top.
  • If you like extra heat, choose a spicier salsa or add a pinch of cayenne pepper to the seasoning mix.
  • Assemble everything up to the first bake a few hours ahead, cover it, and refrigerate. Just add a few extra minutes to the baking time if it goes in cold.
  • Use a shallow baking dish so the layers stay distinct and the cheese gets nice and bubbly, not just melted on top.
  • Have all your toppings prepped and ready before the dip comes out of the oven, it’s best served hot and fresh.

Easy Swaps

  • Use taco seasoning instead of individual spices, one tablespoon replaces all four dried seasonings.
  • Black beans or pinto beans work just as well as refried beans if that’s what you have on hand.
  • Any melting cheese blend works; try a sharp cheddar mix or even just Monterey Jack if Mexican blend isn’t available.
  • Fresh lime juice squeezed over the top before serving brightens everything up if you don’t have fresh cilantro.

Nutrition Notes

This is a rich, indulgent appetizer meant for sharing, portion sizes are naturally small when served as a dip with chips.
