Creamy Chicken Carbonara

Creamy chicken carbonara is one of those dinners that feels fancy but comes together in less than 30 minutes. This version isn’t strictly traditional, but it’s absolutely delicious and perfect for busy weeknights when you want something restaurant-quality without the fuss.

The magic happens when you combine crispy bacon, tender chicken, and a silky egg-and-cheese sauce that coats every strand of pasta. It’s comfort food that actually tastes like you spent hours in the kitchen, but you didn’t.

Simple Ingredients

This dish relies on just a handful of quality ingredients working together. The egg yolks create that signature creamy sauce, while bacon and garlic add depth and flavor. Fresh Parmesan is essential, don’t skip it.

  • Fettuccine pasta: The wider noodles hold the sauce beautifully, but you can swap in pappardelle or even regular spaghetti if that’s what you have.
  • Egg yolks and whole egg: These create the creamy sauce without any cream at all. Make sure they’re at room temperature before you start cooking.
  • Parmesan cheese: Freshly grated makes a huge difference here. Pre-shredded cheese has additives that can make the sauce grainy.
  • Bacon and chicken: The bacon brings smokiness and crunch, while the chicken keeps it hearty and filling. You can use any cooked chicken, rotisserie, grilled, or leftover.

How I Make Creamy Chicken Carbonara

Here’s how to build this creamy pasta from start to finish:

Step 1: Cook the pasta

Bring a large pot of salted water to a boil and cook the fettuccine until it’s just al dente, tender but with a little bite. Reserve about half a cup of the starchy pasta water, then drain everything else.

Step 2: Make the egg sauce

While the pasta cooks, whisk together the egg yolks, whole egg, grated Parmesan, salt, and pepper in a bowl. Set it aside at room temperature.

Step 3: Cook the bacon and aromatics

In a large skillet over medium heat, cook the chopped bacon until it’s crispy and golden, about 6-8 minutes total. Add the minced garlic and cook for just 1 minute until fragrant.

Step 4: Warm the chicken

Stir in your cooked chicken and let it warm through for a few minutes. Turn the heat down to low, this is important so the eggs don’t scramble.

Step 5: Combine everything

Add the drained pasta to the skillet with the bacon and chicken. Pour the egg mixture over top and toss everything together quickly and gently for about 1-2 minutes.

Step 6: Finish with pasta water

Add the reserved pasta water a couple tablespoons at a time, stirring gently until you get a silky, creamy sauce that coats the noodles. You might not need all of it, stop when it looks rich and glossy.

Good to Know

This is a protein-rich, satisfying meal that’s moderate in calories but high in flavor, making it naturally portion-friendly.

Tips From My Kitchen

  • Keep everything moving once you add the eggs, constant gentle tossing prevents scrambling and creates that creamy texture.
  • Room-temperature eggs are crucial. Take them out of the fridge while you’re cooking everything else.
  • Don’t skip reserving the pasta water. That starchy liquid is what transforms the sauce from broken and separated to smooth and luxurious.
  • Taste as you go and adjust salt and pepper at the end. The bacon and cheese are already salty, so you might not need much more.
  • Serve immediately while everything is hot. This dish is best enjoyed fresh, straight from the skillet to the plate.
