Slow Cooker Chicken with Stuffing Dinner

There’s something wonderful about coming home to a meal that’s already waiting for you, and this slow cooker chicken with stuffing dinner does exactly that. With just five minutes of prep work, you can have a hearty, homemade dinner ready when you walk through the door.

This is the kind of recipe that makes weeknight cooking feel effortless. Everything cooks together in one pot, creating a comforting blend of tender chicken and seasoned stuffing that your whole family will love.

The best part? You have the flexibility to cook it low and slow or turn up the heat if you’re short on time. Either way, you’ll end up with a delicious, filling meal.

Gather These Ingredients

This recipe comes together with just a handful of simple pantry staples and fresh chicken. Everything you need is probably already in your kitchen, which makes this meal incredibly convenient for busy families.

  • Boneless, skinless chicken breasts: Two pounds gives you enough protein for a family of four, and they cook evenly in the slow cooker without any fuss.
  • Chicken stuffing mix: Two boxes provide that classic, comforting flavor and texture. I like using low-sodium varieties since the soup and broth already add plenty of seasoning.
  • Cream of chicken soup: Two cans create a creamy base that keeps everything moist and helps the stuffing absorb all those savory flavors.
  • Chicken broth: One can rounds out the liquid, giving you the perfect ratio so the stuffing doesn’t dry out or become mushy.
  • Salt and pepper: These simple seasonings let the chicken shine, and a pinch of cayenne adds a gentle kick if you like a little heat.

Slow Cooker Chicken with Stuffing Dinner: Step by Step

Here’s how to put this dinner together, it’s truly as simple as layering and letting the slow cooker do the work.

Step 1: Prepare Your Slow Cooker

Give your slow cooker a light spray with non-stick cooking spray to prevent sticking. This small step makes cleanup so much easier later .

Step 2: Season the Chicken

Pat each chicken breast dry, then generously season both sides with salt and pepper. If you enjoy a little spice, sprinkle in some cayenne pepper for warmth and depth.

Step 3: Layer the Chicken

Arrange the seasoned chicken breasts in a single layer at the bottom of your slow cooker. They don’t need to be perfectly arranged, just make sure they’re in one layer.

Step 4: Add the Dry Stuffing

Sprinkle both boxes of dry stuffing mix directly over the chicken. Don’t worry about it looking dry at this point, the liquid will bring everything together.

Step 5: Mix the Liquid Base

In a medium bowl, whisk together the two cans of cream of chicken soup and the can of chicken broth until smooth. Pour this mixture over the stuffing and gently stir everything together so the stuffing starts to absorb the liquid.

Step 6: Cook Low and Slow

Cover your slow cooker and cook on low for seven hours, or on high for four hours if you’re in a hurry. The chicken will be tender and the stuffing will have absorbed all those delicious flavors.

Step 7: Finish and Serve

Once cooking is done, give everything a gentle stir to combine the chicken, stuffing, and sauce. Serve it warm right from the slow cooker, and enjoy the comfort food goodness.

Tips From My Kitchen

  • If you’re worried about the stuffing sticking to the bottom, give it a gentle stir about halfway through cooking on the low setting. This helps distribute the flavors evenly.
  • For a lighter version, you can use cream of chicken soup made with less sodium, or swap in a can of chicken and mushroom soup for a different flavor profile.
  • Don’t skip the initial seasoning of the chicken, it makes a real difference in the final flavor, even though everything cooks together.
  • If you have a slow cooker with a removable ceramic insert, you can even prep this the night before and pop the insert in the cooker in the morning.
  • Leftovers are fantastic shredded and tucked into sandwich bread with a little cranberry sauce or gravy, it’s like a warm, comforting sandwich.

What to Serve With This

  • Serve it straight from the slow cooker into bowls, topped with fresh herbs or a sprinkle of crispy fried onions.
  • Shred the chicken and pile it onto soft bread with the warm stuffing mixture for a comforting sandwich.
  • Pair it with a simple green salad dressed with vinaigrette to balance the richness of the dish.
  • Serve alongside steamed broccoli, roasted carrots, or a side of dinner rolls to round out the meal.

Fun Variations

  • Add a cup of sliced mushrooms or diced celery to the stuffing layer for extra vegetables and texture.
  • Swap the chicken stuffing mix for herb or cornbread stuffing mix to change up the flavor completely.
  • Stir in a cup of frozen peas or corn during the last thirty minutes of cooking for added color and nutrition.
  • Top the finished dish with crispy fried onions or fresh parsley for a little garnish and crunch.

For best results, give the mixture a gentle stir halfway through cooking on the low setting. Leftovers keep for three days in the refrigerator and freeze beautifully for up to three months.
